  • Rub the oil all over the lamb. Make some holes on the top with a sharp knife and push the rosemary sprigs and garlic cloves in them, add extra into the sides if you want to.
  • Season with plenty of salt and pepper and place in the air fryer.
  • Cook for 35 – 40 minutes at 180℃ for a 765g lamb shoulder. This came out cooked perfectly and lovely crispy on the outside. Internal temperature should be at least 63℃ . Mine was 71℃ as I like it well done.

Serving suggestions:

Minted yogurt sauce: Serve the air-fried lamb shoulder with a refreshing minted yogurt sauce. Combine Greek yogurt, fresh mint leaves, lemon juice, minced garlic, salt, and pepper. Drizzle the sauce over the lamb shoulder or use it as a dipping sauce.

Roasted vegetables: Pair the lamb shoulder with a side of roasted vegetables such as carrots, potatoes, and Brussels sprouts. Toss the vegetables in olive oil, garlic, and your favourite herbs before roasting them in the oven.

Couscous salad: Create a light and flavourful couscous salad to complement the lamb. Mix cooked couscous with diced cucumbers, tomatoes, red onions, fresh herbs like parsley and mint, lemon juice, olive oil, salt, and pepper.
