- 160 g Mini Eggs (75% crushed 25% whole)
- 100 g Light Brown Sugar
- 130 g Unsalted Butter
- 75 g Caster Sugar
- 1 Egg
- 1 tsp Vanilla Essence
- 1 tsp Baking Powder
- ½ tsp Bicarbonate of Soda
How To Make Easy Mini Egg Cookies
- In a big mixing bowl, combine butter, light brown sugar, and caster sugar, then whisk until the mixture is light, creamy, and fluffy.
- Combine an egg and vanilla extract in the mixing bowl and whisk until well blended.
- Combine the plain flour, baking powder, and bicarbonate of soda in the mixing bowl and whisk until a cookie dough has formed.
- Add the mini eggs and mix.
- Divide the dough into 8 equal pieces and roll into a ball. Place on a plate or baking tray and let them cool in the freezer for 30 minutes to firm up.
