Cucumber sandwiches for afternoon tea

Cucumber sandwiches are a classic staple of any afternoon tea, offering a refreshing bite that perfectly complements a warm cup of your favourite brew.

These delightful sandwiches are made with a thin layer of cream cheese spread on tender slices of bread, topped with crisp cucumber slices.

The cream cheese adds a creamy texture and a tangy flavour that balances the coolness of the cucumber, while the bread provides a soft but firm base for these ingredients.

Why you’ll love this recipe:

  • Refreshing: The cool cucumber slices make this sandwich a perfect choice for a hot day or when you need a light snack.
  • Easy to prepare: With just a few ingredients required, these sandwiches can be prepared in minutes, making them ideal for impromptu gatherings or busy afternoons.
  • Versatile: While traditionally served at afternoon tea, these sandwiches can also be a great addition to lunch boxes, picnics, or as a quick snack.
  • Healthy: Cucumbers are high in water content and vitamins, and when paired with wholegrain bread and cream cheese, provide a balanced, nutritious snack.
  • Delicious: The combination of the tangy cream cheese, fresh cucumbers, and soft bread creates a taste sensation that’s both satisfying and indulgent.

Brown or white bread for a sandwich?

I prefer brown bread than white as it has more flavour and is more nutritional let alone better for your insides!

Classic cucumber sandwiches, or posh cucumber sandwiches are usually made with white bread because it’s lighter and white bread appeals to most people. Kids tend to prefer white bread to brown because to them it’s like eating cake!

How to slice a cucumber for sandwiches

Slicing a cucumber for sandwiches can be done in two different ways depending on the texture and presentation you prefer:

  1. Round Slices: This is the most traditional way to slice a cucumber for sandwiches. First, wash the cucumber thoroughly to remove any dirt or residue. Then, using a sharp knife, cut off the ends of the cucumber. Start slicing the cucumber into thin, even slices. Aim for about 1/8-inch thickness, so they are thin enough to bite through easily but not so thin that they lose their crunch. Round slices are perfect for stacking neatly on a sandwich.
  2. Long, Thin Strips: If you want a different look for your sandwiches or are aiming for a more delicate texture, you might opt for long, thin strips. After washing the cucumber, cut off the ends. Then take a vegetable peeler and run it along the length of the cucumber, creating long, thin ribbons. These ribbons can be layered on a sandwich for a different visual appeal and a softer bite.

Remember, no matter which method you choose, the key is to use a sharp knife or peeler and to work slowly and carefully to ensure uniform slices or strips.
