  • 225 g Baking Spread (Cold)
  • 225 g Caster Sugar
  • 275 g Self-Raising Flour
  • 2 tsp Baking Powder
  • 4 Eggs
  • 2 tbsp Greek Yoghurt
  • 2 tbsp Grapefruit Juice
  • Zest of 2 Grapefruits

Lemon Icing

  • 2 – 3 tbsp Grapefruit juice
  • 180 g Icing Sugar (Confectioners Sugar sifted)
  • Zest of 1 Grapefruit

How to make an easy grapefruit cake (all-in-one method)

STEP 1: You will need a 5 in x 6.5 wide loaf tin. Preheat the oven to 160°c/ 180°c/Gas 4. Grease and line the base of the tin.

STEP 2: Place all the sponge ingredients in a bowl and use an electric whisk to blend everything together for 2 minutes. Turn the mixture into the prepared tin and level the top.

STEP 3: Bake in the oven for 40 – 45 minutes or until the cake shrinks from the sides. Leave to cool in the tin.

Grapefruit Icing

STEP 4: In a bowl, add the grapefruit juice to the icing sugar a bit at a time to give a runny consistency but thick enough to set. Drizzle over the cake any way you like. Sprinkle with grapefruit zest and leave to set before cutting into pieces.

Tips

If you are using a shallow tin it will need less cooking time, alternatively if you are using a smaller deeper tin it will need a longer cooking time.

Store in an airtight container to keep fresh for up to a week.
