  • 1 Clove of Garlic (Crushed)

How to make roasted chicken thighs with cauliflower and herby yoghurt

Who doesn’t love a good chicken thigh? They’re delicious, succulent, and so easy to make. In this recipe, I’m going to show you how to make roasted chicken thighs with cauliflower and herby yoghurt. The best part is that it’s really easy and only takes about 10 minutes to prepare!

  • Heat the oven at 190°c fan/210°c/400°f
  • In a bowl, mix together the ground coriander, paprika, cayenne pepper, salt, pepper and 1 tbsp olive oil. Add the chicken thighs and toss to coat. Add the chicken to the oven-proof dish.
  • Add the cauliflower, broccoli, shallots, remaining oil and salt and pepper to the bowl and toss to coat. Arrange the vegetables around the chicken thighs. Cover with kitchen foil and bake in the oven for 40 minutes.
  • Meanwhile, make the yoghurt sauce. In a bowl, mix the yoghurt, mint, coriander, lemon juice, and garlic with a pinch of salt and pepper. Cover with cling film and keep in the fridge until needed.
  • Serve the chicken and veg with any leftover juices and a squeeze of lemon juice. Serve with a dollop of herby yoghurt on the side.
