I’ve finally got round to making my own version of Nandos Peri Peri Chicken, and it’s so tasty, that I couldn’t stop eating it. I’ve been meaning to try my hand at making this dish for ages, and I’m so glad I finally did. The chicken came out perfectly cooked and incredibly juicy, and the peri peri sauce was the perfect balance of spicy and tangy. I served it with some simple roasted vegetables and a side of rice, and it made for a really delicious and satisfying meal. The best thing about this recipe it’s quick to prepare, and you can just shove it in the oven whilst you do other things. I’ll definitely be making this again soon – it’s just too good to resist! Ingredients

  • 750 g Chicken Thighs (Score the skins with a sharp knife)
  • 2 Corn on the cob (Cut in halves)

Marinade for Nandos Peri Peri Chicken

  • 2 tbsp Olive Oil
  • 1 tsp Cayenne Pepper (or 2 tsp if you like it spicier)
  • 4 Cloves of Garlic (Crushed)
  • 2 Limes (Juices)
  • 2 tsp Smoked Paprika
  • 2 tsp Oregano
  • ½ tsp Salt
  • ½ tsp Black Pepper

How to make Nandos peri peri chicken

  • Preheat the oven to 200°cfan/220°c/425°fGas 7.
  • Mix all the marinade ingredients in a bowl and add the chicken thighs making sure they are fully coated. Leave for at least an hour if you can; if not, place the coated chicken in an oven-proof dish and put it in the oven for 30 minutes.
  • Remove from the oven and add the corn cobs in between the thighs. Place back in the oven for another 10 minutes.
  • Serve with rice and top with the leftover juice from the roasting tray.
