Plus, chicken thighs are often cheaper than chicken breasts, so you know you’re getting food that tastes great for a bargain! Choose one that suits your wood burner. Our wood burner is small, so the oval pot works best in the small area on top of the stove.

What to serve with chicken thighs and cauliflower

Our chicken thighs cooked on the wood burner were undeniably delicious! Creamy and sumptuous, they were the perfect hearty dinner. To ask what side is best to serve alongside chicken thighs is like asking which flavour of ice cream you enjoy more – it all comes down to personal preference.

We chose quinoa, but you could also serve your chicken thighs with a simple bed of fluffy white rice, creamy mashed potatoes, golden chips or savoury naan bread. No matter what side dishes you choose to accompany it, one thing is for sure – the chicken will be sensational!

Ingredients

For six portions, you will need the following:

  • 8 Chicken Thighs (Boneless and cut each thigh into three pieces)
  • ½ Leek (Chopped)
  • 2 Green Peppers (Chopped)
  • 1 small Cauliflower (Roughly Chopped)
  • 2 Cloves of garlic (chopped)
  • 1 Bay leaf
  • ¼ tsp Rosemary
  • ¼ tsp Thyme
  • ¼ tsp Lemon Thyme
  • 2 tbsp Tomato Puree
  • 350 ml Creme Fraiche
  • Olive Oil
  • 2 tsp Bouillon Powder (Mixed in a cup of hot water)
  • 2 tsp Chilli sauce (optional)

How to make creamy chicken thighs to go on the wood burner

  • Grease the cast iron pot with olive oil. Add the chicken pieces. Mix the bouillon stock and tomato puree together and add to the dish.
  • Add the chopped leek, cauliflower, herbs, spices and garlic. Add the creme fraiche and give it a stir. Add a little water if necessary and put the lid on. Place on your lit wood burner for 2 hours. After 1 hour of cooking, give it a stir.

Top Tips

Ensure your wood burner is burning hot when you place your pot on it, or it will take longer to cook.

If the mixture feels a bit thick, add a little water to loosen it, but you shouldn’t need it unless you add other vegetables.
