Slow Cooker Extra Vegetable Pasta With A Rich Tomato Sauce

I added the veg and the penne pasta at the same time and cooked it on high for 3.5 hours, and it turned out great! Penne pasta isn’t too small, so it won’t end up mushy. If you like a more al dente pasta (pasta cooked all the way through that retains a slight chew), keep it aside and add it to the slow cooker an hour before serving.

- 4 tbsp Tomato puree
- 1 tbsp Chilli Paste (or tsp of chilli powder)
- 1 Jar Passata (or tin of chopped tomatoes)
- 3 Cloves of Garlic (Chopped)
- 1 tbsp Basil (Fresh – chopped)
- 2 tbsp Worcestershire Sauce
- 1 tbsp Boullion Powder (or 2 stock cubes
- Salt and Pepper – to season

- 1 sml Broccoli (Chopped)
- 3 Sticks of Celery (Chopped)
- 300 g Penne Pasta
- 1 lrg Courgette (Chopped)
- 4 tbsp Tomato puree
- 1 tbsp Chlli Paste (or tsp of chilli powder)
- 1 Jar Passata (or tin of chopped tomatoes)
- 3 Cloves of Garlic (Chopped)
- 1 tbsp Basil (Fresh – chopped)
- 2 tbsp Worcestershire Sauce
- 1 tbsp Boullion Powder (or 2 stock cubes)
- 1 handful Kale (Chopped)
- Salt and Pepper (to season)
Instructions
- Add all the chopped vegetables to the bottom of the slow cooker, topped with the spices and herbs and tomato sauce and puree.
- Dependng on the type of pasta you are using add them on top of your ingredients. Alternatively add the pasta an hour before it's ready.
- Add water so that everything is covered, and set the temperature to high. Cook for about 3 to 3½ hours. Serve with a sprinkling of grated cheese and a piece of garlic bread.
