Slow Cooker Extra Vegetable Pasta With A Rich Tomato Sauce

When to add pasta to the slow cooker?

This is a great question, and it really depends on the recipe and the type of pasta you are using. If you’re unsure, it’s always best to keep on the side of adding the pasta closer to the end of the cooking time (about an hour before), so it doesn’t become overcooked.

I added the veg and the penne pasta at the same time and cooked it on high for 3.5 hours, and it turned out great! Penne pasta isn’t too small, so it won’t end up mushy. If you like a more al dente pasta (pasta cooked all the way through that retains a slight chew), keep it aside and add it to the slow cooker an hour before serving.

Variations for slow cooker penne pasta

Use different pasta shapes – try shells, macaroni, or spirals.

Add extra vegetables – Carrots, peas, or spinach are all great options.

  • 1 small Broccoli (Chopped)
  • 3 Sticks of Celery (Chopped)
  • 300 g Penne Pasta
  • 1 large Courgette (Chopped)
  • A handful of Kale – finely chopped
  • 4 tbsp Tomato puree
  • 1 tbsp Chilli Paste (or tsp of chilli powder)
  • 1 Jar Passata (or tin of chopped tomatoes)
  • 3 Cloves of Garlic (Chopped)
  • 1 tbsp Basil (Fresh – chopped)
  • 2 tbsp Worcestershire Sauce
  • 1 tbsp Boullion Powder (or 2 stock cubes
  • Salt and Pepper – to season

How to do veggie pasta in the slow cooker

  • STEP 1: Add all the chopped vegetables to the bottom of the slow cooker, topped with the spices and herbs and tomato sauce and puree.
  • STEP 2: Depending on the type of pasta you are using, add them on top of your ingredients. Alternatively, add the pasta an hour before it’s ready.
  • STEP 3: Add water so that everything is covered, and set the temperature to high. If you are adding your pasta near the end of cooking, make sure you’ve added enough water at the start. Cook for about 3 to 3½ hours. Serve with a sprinkling of grated cheese and a piece of garlic bread.
