Quorn mince is a lot cheaper than the traditional beef mince and is a super and handy ingredient to store in the freezer. So if you’re looking to save a few pennies this is the one for you.

I use the traditional spaghetti pasta for this meal but you can use any shaped pasta or use can add it to rice or on top of a butter jacket potato topped with lots of cheese!

Ingredients

You will need:

  • 2 tablespoon olive oil
  • 1 onion diced
  • 150 g  mushrooms 
  • 1 red pepper 
  • 200 g Quorn mince
  • 1 vegetable stock cube
  • 1 teaspoon dried oregano
  • 2 x 400g chopped tomatoes 
  • Salt and pepper to taste
  • 300 g spaghetti
  • Cheese – grated
  • Hot smoked paprika
  • Pinch of cayenne pepper
  • 1 tbsp Sundried Tomato paste

How to make meat-free Quorn bolognese

Put the onion and olive oil in a deep saucepan. Gently fry for about 5 minutes – until soft and browned!

Stir occasionally while cooking on low heat, then add mushrooms ( fry for 2 more minutes)

Add the paprika, cayenne pepper, Quorn mince, oregano, salt and pepper (to taste), tinned tomatoes and crumbled stock cube.

Bring to a boil, then add the red peppers and simmer with the lid on.

Cook your pasta as per packet instructions.

When your pasta is done, your sauce will be done too!
