Easy Meat Free Quorn Bolognese

- 2 tbsp Olive oil
- 1 Onion (Chopped)
- 150 g Mushrooms (Chopped)
- 1 Red Pepper
- 1 Vegetable Stock Cube (The crumbly sort)
- 1 tsp Oregano (dried)
- 2 400g Tinned tomatoes
- 1 tsp Hot Smoked Paprika
- ½ tsp Cayenne Pepper
- 1 tbsp Sundried Tomatoes
- Salt and Pepper
- 300 g Spaghetti
- Cheese (grated to sprinkle on top)
Put the onion and olive oil in a deep saucepan. Gently fry for about 5 minutes - until soft and browned!
Stir occasionally while cooking on low heat then add mushrooms ( fry for 2 more minutes)
Add the paprika, cayenne pepper, Quorn mince, oregano, salt and pepper (to taste), tinned tomatoes and crumbled stock cube.
Bring to the boil then add the red peppers and simmer with the lid on.
Cook your pasta as per packet instructions.
When your pasta is done your sauce will be done too!
