  • 4 Eggs
  • 200 g Dark Brown Sugar
  • 200 g Self-Raising Flour
  • 1 tsp Baking Powder (level)
  • 200 g Ground Almonds
  • 100 g Dark Chocolate Chips
  • 100 g Milk Chocolate
  • 100 g Dark Chocolate
  • 1 Large Pear (Peeled and sliced into chunks)
  • 3 tsp Ground Ginger (or fresh)
  • 200 ml Oil

STEP 1: Preheat the oven to 180℃FAN/200℃. Line a baking tray or roasting tin 20cm x 30cm approx. with baking paper.

STEP 2: Whisk the eggs, sugar and oil in a bowl, then fold in the flour, ground ginger, baking powder, ground almonds and chocolate chips.

STEP 3: Pour the mixture into the tin and level out. Add the pear pieces on top, poking them into the batter. Bake for 30 minutes or until the skewer comes out clean. Leave to cool in the tin for 5 minutes the transfer to a wire rack.

STEP 4: Break up the chocolate into a bowl and melt in the microwave, 30 seconds at a time. Using a tablespoon add the chocolate sauce sauce on top of the cake in any direction.

Cut into slices and serve.
