There are a few different types of nuts that can be used as an alternative to walnuts in cookies. These include:

Ingredients for Walnut and Chocolate Chunk Cookies
To make these lovely cookies, you will need:
Vegetable shortening/Vegetable Lard
Unsalted butter
Granulated sugar
Brown sugar
2 large eggs
Vanilla extract
Plain flour
Baking powder
Baking soda
Salt
Chocolate chips
Dark chocolate bar, chopped
Walnuts, chopped
How many cookies does it make?
The ingredients make 24 cookies, but you can make smaller cookies with a small dough scoop (which yields 48 cookies).
Gluten-Free Walnut and Chocolate Cookies
If want to make these gluten-free, obviously change the flour to a gluten-free one but add some Xanthum Gum to bind it together and prevent them from falling apart when rolling them into balls.
How to make Walnut and Chocolate Cookies
- Preheat the oven to 375ยฐF/170 c fan/190 c/gas 5 and line a large, rimmed baking sheet with parchment paper or a Silpatยฎ baking mat. Set aside.
- Cream shortening and butter with granulated and brown sugars in a large mixing bowl. Mix in eggs and vanilla extract until well blended.
- Add in flour, baking powder, baking soda, and salt. Mix to combine.
- Fold in chocolate chips, chopped chocolate and walnuts until thoroughly combined.
- Use a large cookie dough scoop to make 24 balls of dough. Place 6 balls of dough on the prepared baking sheet with 1-2 inches in between each ball. Flatten the dough with the bottom of a glass.
- Place in preheated oven and bake 10-12 minutes or until golden brown and cooked through. Remove from oven and cool slightly before serving. Enjoy!
