Ingredients

  • 2 tbsp Vegetable Oil
  • 250 g Egg Noodles
  • 2 cups Leftover Turkey (Cut into small pieces)
  • 1 Sweet Red Pepper (chopped)
  • 6 Spring Onions (Chopped)
  • 4 Cloves of Garlic (finely chopped)
  • ½ Broccoli (or Purple Sprouting- chopped)

Marinade For Turkey

  • 1 tsp Garlic Powder (granules)
  • 1 tbsp Ground Ginger
  • 1 tbsp Soy Sauce (or Tamari Sauce)
  • 2 tsp Black Pepper
  • 1 tsp Salt

Chow Mein Sauce

  • 4 tbsp Oyster Sauce
  • 4 tbsp Soy Sauce
  • 4 tbsp Vinegar
  • 2 tbsp Brown Sugar
  • 2 tbsp Sesame Oil
  • 2 tbsp Chilli Sauce (or chili powder)
  • 1 tsp Salt

How to make turkey chow mein from leftover turkey

Add the marinade to the turkey pieces, mix thoroughly and set aside.

Chop the veg and set aside. In a small bowl add all the chow mein sauce ingredients and mix together. Set aside.

Cook the noodles per packet instructions and set aside.

Heat the pan/wok with the vegetable oil on medium to high heat and fry the spring onions and garlic for 1 minute and then add the broccoli, and red pepper. Cook for 2 minutes. Add the turkey and cook until heated through.

Add the noodles and the chow mein sauce. Mix thoroughly and continue to cook until heated through and hot. Serve immediately.
