The Best Cauliflower Fried Rice (Keto Style)

Cauliflower rice is a healthier yet tasty alternative to traditional fried rice. A variety of textures and flavours making the dish interesting.

When I first heard of cauliflower rice, I never really fancied it but thought I would give it a try anyway. Now that I have made it and tried it, it is a regular dish in our household.

For those that are on a Keto or Hays diet, this is the ideal recipe. No carbs, wheat-free and gluten-free recipe.

You can have this as a main meal or as a side dish. You could even add a Keto Salad to it.

CAULIFLOWER FRIED RICE HOT OR COLD?

Cauliflower fried rice can be eaten hot or cold. So if you have any leftovers, save them for the next day and eat them cold. It tastes even better!

WHAT GOES IN CAULIFLOWER FRIED RICE?

Cauliflower, obviously! This is placed in your food processor and set to the pulse setting to mix and form a rice texture.

CAULIFLOWER FRIED RICE WITH EGG AND BACON

You can add anything you like with cauliflower rice, but the ingredients listed in the recipe below make it super tasty. My husband really enjoyed it, and that’s without any carbs!!

You can make this a vegetarian cauliflower rice by replacing the meat with meat-free version meats, or by using Tofu as an alternative or adding extra vegetables.

WHAT EQUIPMENT DO I NEED TO MAKE CAULIFLOWER RICE?

I use my old faithful Kenwood Mini Chopper. I do have a larger version too. If you have a small kitchen, get the mini version. It’s great for all veggie chopping, especially onions!!

I serve mine in some nice decorative bowls, but whatever you have available.

HOW TO MAKE CAULIFLOWER FRIED RICE

  1. Pulse the cauliflower in a food processor until it resembles rice.
  2. Fry the bacon until brown and crispy.
  3. In a separate frying pan, add a splash of oil and add the whisked eggs. Fry them without stirring until cooked through. Remove and place on a chopping board. Roll up, then cut into slices. Set aside.
  4. Add the coconut oil to the cooked bacon and increase the heat to high. Add the spring onions, ginger, garlic and carrots. Stir and fry for 1 minute.
  5. Add more oil to the pan if needed, then add the cauliflower rice. Stir fry for 4 minutes.
  6. Add the rest of the ingredients, including the egg. Fry until the peas have defrosted.
  7. Serve in bowls topped with sesame seeds and splash of lime.

Ingredients
  

  • 1 Head of Caulflower
  • 5 Rashers of Bacon
  • 1 tbsp Coconut Oil or Sesame Seed Oil
  • 3 Eggs whisked
  • 5 Spring Onions
  • 1 tsp Ground Ginger or Grated Fresh Ginger
  • 3 Garlic Cloves minced or finely chopped
  • 90 g Carrots
  • 140 g Frozen Peas
  • 6 Anchovy Fillets chopped
  • 2 tbsp Wheat-free Tamari Sauce
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Lime Juice
  • 1 tsp Ground Coriander or Chopped fresh
  • 1 handful Sesame Seeds to serve

Instructions
