We all like meals that can be done quickly, especially when you are hungry! This lunch or dinner Keto salad is perfect for that and all done in a matter of minutes or even faster if you’ve already boiled your eggs. This is filling yet super tasty, so you won’t want to snack later on.

With salads, you always think that’s probably not going to fill me, but this does as it has plenty of protein, and we know protein keeps you full for longer, and it has plenty of green leaves to give us plenty of iron to keep us alert. I tend to have this meal at lunch as I like a hot meal at dinner, especially when it’s winter! brrrrr

INGREDIENTS FOR KETO TUNA AND SALAD

I always try and get organic ingredients as it tastes so much better, and who wants chemicals on their food! Your plate should contain 1/3 organic protein, 1/3 healthy fat and 1/3 organic vegetables.

I think the best thing about a keto diet is having tasty cheese and putting lovely olive oil over your food. We all love fat, and it’s good for the brain, and the keto diet improves your memory! By getting 80% of your calories from fat and very few carbs, you’ll shift into fat-burning mode and will transform your health.

Having plenty of tinned tuna in the cupboard is a no brainer. If in doubt about what to it, grab a tin of tuna. They are zero carbs!!

When it comes to buying eggs getting organic eggs is a must. Eggs are the healthiest source of protein around. The yolk has vital nutrients that are important to liver and nerve function. Eggs contain most vitamins apart from vitamin C.

Eggs reduce the risk of heart disease and contain nutrients that do everything from improve eye health and slow down sun damage on your skin.

Ingredients
  

  • 2 Tins Tuna
  • 3 Eggs (Boiled)
  • 2 lrg Roasted Peppers (From a jar)
  • 4 Cherry Tomatoes
  • 2 Handfuls Rocket
  • 2 Handfuls Watercress
  • 1 Handful Spinach
  • 6 Sundried Tomatoes
  • 4 Slices Pickled Beetroot
  • 4 Gherkins
  • Olive Oil
  • Lemon Juice
  • Salt and Pepper

Instructions
 

  • Place Rocket, Watercress and Spinach on your plates.
  • Drain the tuna from tins and flake in a bowl and add lemon juice then add on top of your leaves.
  • Slice the roasted peppers and tomatoes, beetroot and gherkins and lay on top of your tuna.
  • Halve the boiled eggs and place on top of salad. Drizzle salad with olive oil and season.
