The Best Courgette and Grapefruit Cake

If you grow courgettes, you probably know how fast they grow and have to keep on top of the picking. One way of using them is to put them in a cake like this courgette/zucchini and grapefruit cake. They make it lovely and moist, plus it’s a very quick and easy cake to make.

DO YOU NEED TO PEEL THE COURGETTES?

No, keep the skin on for extra nutrition, and it gives the cake a bit of colour.

WHAT DOES COURGETTE CAKE TASTE LIKE?

Courgette cake doesn’t really taste of anything, but they make any cake moist. This is where you need to add to flavours, like grapefruit or lemon. Courgettes are a great addition to chocolate cakes.

WHAT’S THE DIFFERENCE BETWEEN COURGETTES AND ZUCCHINIS?

The is no difference. The Britsh name them courgettes, and the Americans call them zucchinis.

VEGAN COURGETTE CAKE

Make this cake vegan by substituting the eggs with 120ml of sunflower oil. If you find the mixture too runny add a bit more flour. You will find the cake will be denser but will still be tasty.

COURGETTE TRAYBAKE

This recipe will make a great traybake as it is less likely to dry out. Just reduce the baking time by 10 to 15 minutes. If you’re into traybakes, try my cheese and olive traybake recipe they are a great addition to soups.

WHAT EQUIPMENT DO I NEED TO MAKE A COURGETTE CAKE?

  • 250 g Margarine
  • 200 g Caster Sugar
  • 3 Eggs
  • 250 g Self-Raising Flour
  • 1 tsp Bicarbonate of Soda
  • 200 g Courgettes

ICING

  • 140 g Icing Sugar
  • 1 Pink Grapefruit zest and 2-3 tbsp juice with a bit of pulp

How to make courgette cake

  • Heat oven at 160°C Fan oven. Grease and line a springform tin.
  • Beat the margarine, sugar, eggs, flour, bicarb and zest together and fold in the grated courgettes.
  • Add the mixture to the tin and bake for 40 to 45 minutes until golden and cooked through. Leave to cool.
  • Mix enough grapefruit juice with pulp into the icing to make it a thick but drizzly icing. Pour on top of the cake and spread evenly, and let it drip naturally over the sides.
