- 1/2 x Cauliflower
- 1/4 Butternut
- 100g Frozen Peas
- 1 x Tin of Chopped Tomatoes
- 1 x tbsp Tomato Puree
- 2 x stock cubes
- Dash of Tamari Sauce
- 1 tbsp Tomato Ketchup
- 1 x tin of Coconut Milk

- 2 cloves garlic
- 1 x tsp Ground Ginger
- 75 g jarred roasted peppers
- 1 tablespoon paprika
- 1 teaspoon smoked paprika
- 2 teaspoons garam masala
- 1 teaspoon turmeric
- 2 tablespoons tomato puree
- 1 tsp Cayenne Pepper
- 1 tsp ground coriander
- 2 teaspoons cumin seeds for toasting
- 1 teaspoon black pepper
Is Rogan Josh Mild?
It’s not mild and creamy like a Korma, yet it’s not super hot and spicy like a vindaloo. I would say it was somewhere in between. I don’t like really spicy food, but this recipe is just right. If you do find it spicy, top with a dollop of plain yoghurt, as this cools it down and makes it lovely and creamy.

How to make Rogan Josh Curry
Put your frying pan on medium to high heat and lightly toast the cumin seeds. When toasted, add this to a pestle and mortar and grind down. Transfer to a food processor together with the rest of the spice ingredients and mix to form a smooth paste.
Add back to the frying pan and add your vegetables and the rest of the ingredients except the coconut milk. Add a little water to loosen everything, cover with a lid, and cook for 15 minutes. For those that like a bit of meat to their dish, chicken goes well with this curry.
Before adding the chopped tomatoes add in the chopped chicken and stir to coat it with spices. Continue frying for a couple more minutes so that all sides are golden brown before adding the rest of the ingredients. Serve with fluffy rice.

- 1 tsp Tumeric
- 2 tbsp Tomato Puree

- 1 tsp Ground Coriander
- 2 tsp Cumin Seeds (For Toasting)
