For about 18 cakes, you will need the following:
- 200 g Digestive Biscuits
- 135 g Butter
- 200 g Dark Chocolate (52%)
- 3 tbsp Golden Syrup
- 100 g Mini Marshmallows
- 100 g Currants
- 200 g Cadbury’s Mini Eggs (or any chocolate mini eggs)

Storage
Stores the easter rocky roads in an air-tight container to ensure they are kept fresh and crunchy. Try to keep them in a cool place for the best results, or you can even freeze them for up to three months! Easy Easter Mini Eggs Rocky Road Recipe
Equipment
Ingredients
- 200 g Digestive Biscuits
- 135 g Butter
- 200 g Dark Chocolate (52%)
- 3 tbsp Golden Syrup
- 100 g Mini Marshmallows
- 100 g Currants
- 200 g Cadbury's Mini Eggs (or any chocolate mini eggs)
Instructions
- Place the muffins case in a muffin tray ready for fillng.
- Bash the biscuits in a bag so there are lots of little chunks of biscuits.
- Melt the butter, chocolate and syrup in a saucepan over a gentle heat or in the microwave for 20 seconds at a time until melted. Leave to cool.
- Add the rest of the ingredients (except the mini eggs) to the saucepan or bowl and stir until everything is covered.
- Tip into the muffin cases then add 3 mini eggs on top of each cake. Chill for a least 2 hours. Then store in a cake tin or airtight container.
