You can also use any type of tomato that you have on hand. Just make sure that they are ripe and ready to be used. The ones I have used in this recipe are homegrown cherry tomatoes. They are super juicy and sweet, you can’t beat homegrown!

Simply dice up the tomatoes and add them to your food processor with the rest of the ingredients. The salsa will be a little runnier this way, but it will still taste great. So next time you’re in a pinch, don’t hesitate to skip the roasting step and make your salsa quickly and easily.

- 400 g Cherry Tomatoes (Halved)
- 2 tbsp Dry Sherry
- 2 Cloves of Garlic (Keep whole)
- 1 Shallot (Finely chopped)
- 1 tbsp Sherry Vinegar
- Salt to taste
- Coriander (or Parsley)

How to make the perfect roasted tomato salsa
- Preheat the oven to 180ยฐc fan/200ยฐc/Gas 6.
- Half the cherry tomatoes and put in an oven-proof dish with the dry sherry and the whole cloves of garlic. Cover with foil and roast for 30 minutes.
- Place the chopped shallots in a bowl with a pinch of salt and sherry vinegar. Set aside.
- Leave tomatoes to cool. Mash the garlic and add to the bowl of shallots. Add the tomatoes and mix through. Garnish with coriander or parsley.
How long does homemade salsa last in the fridge?
Homemade salsa will last in the fridge for up to a week. But if you want it to last even longer, you can always freeze it. Simply place it in a freezer-safe container and store it in the freezer for up to six months. When you’re ready to eat it, just thaw it out in the fridge overnight.
