  • 320 g Ready made puff pastry sheet
  • 4 tbsp Ground Almonds
  • 800 g Plums (halved and stoned)
  • 3 tbsp Caster Sugar
  • 25 g Flaked Almonds

How to make plum and almond puff pastry

STEP 1: Preheat the oven to 220℃/200℃fan/Gas7. Take the puff pastry out of the fridge and leave out for 15 minutes.

STEP 2: Line a baking tray with baking paper. Unravel the puff pastry and place on the baking paper.

STEP 3: Sprinkle over the ground almonds and scatter the plums into an even layer. Sprinkle with flaked almonds, then the sugar.

STEP 4: Bake for 20 minutes until the pastry is golden. Allow to stand for 10 minutes to cool and sprinkle a little more sugar on top. Cut into pieces and serve.

Storage

These are best eaten on the day you have made them but you can keep in the fridge for an extra day covered in foil or an airtight container.
