The Chocolate

When it comes to chocolate quality really matters. I always go for the organic products when I can and buy in bulk so it works out cheaper. The best one I found and use all the time is this cacao powder it is organic and raw. A great healthy ingredient to add to cakes, treats and desserts. What’s the difference between cacao and cocoa?

Cacao is the raw, unprocessed form of cocoa. Cocoa powder is made by roasting the cacao beans, which reduces the amount of antioxidants they contain. Some people prefer the taste of cocoa powder because it has a more chocolatey flavour, but cacao beans have a more complex and intense flavour.

The terms “cocoa” and “cacao” are often used interchangeably, but they actually refer to different things. Cocoa is the dried, roasted bean that is used to make chocolate. Cacao is the cocoa fruit before it has been dried and roasted. So, cacao refers to the whole food, while cocoa refers to the processed product (chocolate).

The Keto Flours

The flour for this recipe is Almond Flour (basically ground almonds). When it comes to buying keto ingredients always bulk buy as it works a lot cheaper! I get my Almond Flour from BuyWholeFoodsOnline which are also on Amazon which is great for fast delivery.

You can mix it up a bit and use either coconut flour or hazelnut flour to give it a unique taste.

The Sweetener

You’ve got a few options to go from. There is Xylitol. If you’re looking for a healthy and delicious sugar-free sweetener, look no further than xylitol! Made from 100% xylitol, this natural sweetener is perfect for promoting healthy teeth and has nearly half the calories of sugar. Plus, it has a low glycaemic index so it won’t spike your blood sugar levels.

The second is  Erythritol. Make sure it is powdered Erythritol and not granulated otherwise you will have to blend it yourself in a blender. This is great when you want to do icing on a keto cake.

The third is powdered Stevia. You need to use less than what you would do normally so gradually add it to your mixture and taste it. I usually add about 2 tbsps to this recipe.

Toppings

The topping I use in this recipe are Walnuts but you can easily change it to hazelnuts or even peanuts if walnuts are not to your liking. Whatever tickles your fancy! Try my Keto Ginger Brownies topped with chocolate!

Top Tips When Making These Keto Cheesecake Brownies

The top tip when making this keto recipe is not to overbake. So for this recipe bake for about 20 to 25 minutes depending on what baking tin you are using.

Ingredients
  

  • 56 g Unsalted Butter
  • 150 g Sweetener
  • 128 Cream Cheese
  • 4 Eggs
  • 120 g Almond Flour
  • 1 tsp Baking Powder
  • 38 g Unsweetened Cocoa Powder
  • ½ tsp Salt

TOPPING

  • 258 g Cream Cheese
  • 38 g Unsweetend Cocoa Powder
  • 90 g Powdered Sweetener
  • 2 tsp Vanilla Essence
  • 75 g Chopped Walnuts
  • 70% Dark Chocolate to decorate

Instructions
 

  • Preheat oven to 160°c Fan oven or 180°c non fan |350°F| Gas Mark 4.
  • Grease a square brownie tin and line with baking paper.
  • Cream the butter and sweetener together until light and fluffy. Next add the cream cheese and combine well.
  • Gradually add in the eggs and mix until smooth. Add the flour, baking powder , vanilla essence and salt and stir everything together.
  • Pour the batter into the brownie tin and spread out evenly. Bake in the oven for about 20 -25 minutes until cooked through. Leave to cool in the tin, then remove.
  • Now mix the cream cheese, cocoa powder, sweetener together to make the icing. Spread evenly over the cake and scatter the walnuts over the top. Garnish with the grated chocolate. Cut into squares.

Notes

If you use Stevia sweetener reduce the amount to about 2 – 3 tablespoons.
Use hazelnuts or peanuts as an alternative to walnuts.
