Easy Fruit, Nut and Choc Chip Flapjack Recipe

A wholesome, satisfying fruit, nut and chocolate chip flapjack that goes great with a cup of tea. These flapjacks are so handy to have (maybe too handy) for a mid-morning snack or breakfast on the go! A quick and easy recipe, there’s no excuse not to make these.

WHAT INGREDIENTS DO I NEED TO MAKE FLAPJACKS?

Here is a list of items to add to your shopping list. If you can’t get hold of dried Morello Sour Cherries from the supermarket, click on this link to order them online. They are so good!

  • Butter
  • Golden Syrup
  • Light Brown Muscovado Sugar
  • Oats
  • Brazil Nuts (Chopped in your mini-chopper)
  • Flaked or whole Almonds (Chopped)
  • Morello Sour Cherries (dried)
  • Dark Choc Chips

You can have a different selection of nuts if you don’t like the ones in this recipe and the same goes with the fruit. If you want a plain flapjack just skip on the fruit, nuts and chocolate.

HOW TO MAKE VEGAN FLAPJACKS

These are quick to convert to vegan just change the butter to a vegan block and make sure the choc chips are vegan too.

HOW TO MAKE HEALTHY FLAPJACKS

Flapjacks are quite healthy already, but in this recipe, omit the choc chips and change the butter to a low-fat spread OR just simply have a bite-sized piece. If you love this recipe, you’ll love my bite-sized chocolate flapjack recipe.

MAKE THESE INTO PROTEIN BARS

These flapjacks are a good source of protein but to make them more into a protein bar add 3 scoops of Collagen Protein Powder and omit the choc chips.

WHAT EQUIPMENT DO I NEED?

You will need a roasting tin of about 20 x 30 cm

A brownie cutter. It’s a lot easier to cut with one of these than a knife!

Baking Paper to line your tin. Go fo the 50 meters 2 pack, it’s always handing to have in plus it’s cheaper to do it this way.

Mini Chopper to chop your nuts!

Palette knife so you can spread the mixture evenly in the tin.

Saucepan to mix everything in.

Glass bowl to measure your ingredients.

Digital Scales of course!

Airtight container to store your delicious flapjacks.

HOW TO MAKE CHOCOLATE, FRUIT AND NUT FLAPJACKS

These are very easy to make, just melt the butter, sugar and golden syrup in the pan until dissolved and then add the oats and the rest of the ingredients.

Spread out evenly on your tin and spread out with a palette knife.

Bake in the oven for about 25 minutes. Leave to cool for 5 minutes, cut into fingers, then leave to cool completely and remove from the tin.

  • 125 g Butter
  • 90 g Golden Syrup
  • 90 g Light Brown Sugar
  • 250 g Oats
  • 50 g Brazil Nuts (Chopped)
  • 50 g Flaked or Whole Almonds (Chopped)
  • 50 g Dried Morello Sour Cherries
  • 50 g Dark Choc Chips (optional)

  • Pre-heat oven at 160°C Fan or Gas 4
  • Lightly grease a 20 x 30 cm roasting tin with baking paper.
  • Combine the butter, syrup and sugar in a saucepan and heat gently until all is disolved.
  • Stir in the oats and the rest of the ingredients and muix well.
  • Spoon into the prepared tin and level out with a palette knife.
  • Bake in the oven for 25 minutes or until golden brown. If you want more of a crunchy flapjack bake for an extra 5 minutes.
  • Leave to cool in the tin for 5 minutes, then partiallt cut into 21 fingers. Leave to cool completely, then cut through and remove from tin and store in an air tight container.
