What is coleslaw?

The dressing is usually made with mayonnaise, vinegar, mustard, and sugar. However, there are many variations of this salad, and many different dressings can be used. I haven’t used any vinegar in this recipe.

How to shred vegetables for coleslaw

To shred cabbage for coleslaw, use a sharp knife to cut the cabbage into thin strips. You can also use a food processor (a lot quicker and safer) to shred the cabbage. If you are using other vegetables, such as carrots or celery, I would use a food processor. My favourite tool is a mini-chopper.

What goes with beetroot coleslaw?

There are many possible dishes that could be served with beetroot coleslaw. My favourite dish to go with coleslaw is quiche!

Some examples might include roasted chicken (I tried this last night and it was so good!) or pork, grilled fish, or simply a green salad. Really, it depends on what you and your guests prefer. Whatever you choose, make sure that all of the flavours compliment each other well.

You will need:

  • 3 Beetroots
  • ½ White Cabbage
  • 1 lrg Carrot
  • 3 sml Onions
  • 2 Green Chillies
  • 3 Cloves of Garlic Crushed
  • 200 g Mayonnaise
  • 2 tbsp Olive Oil
  • 6 tbsp Salad Cream
  • Salt and Pepper to season

How to make beetroot coleslaw

  • Finely chop all your vegetables or use a food processor and place them in a large bowl.
  • Add the olive oil, mayonnaise, salad cream and salt and pepper and mix thoroughly until everything is coated in the dressing.
  • Cover and refrigerate until ready to serve. Enjoy!
