Sausage and kale pasta in tomato sauce

There’s something so satisfying about a dish that encompasses all the different food groups into one delicious bowl, and my sausage and kale pasta recipe is no exception. For this recipe, I recommend using spicy sausage, which adds a punch of flavour to the dish. As for the pasta, any shortcut of pasta will work, but I prefer rigatoni or fusilli as the pasta crevices can hold onto the sauce and bits of sausage.

Kale is the perfect vegetable to pair with this dish, providing a slightly bitter and earthy flavour. Make sure to remove the stems and wash the kale leaves thoroughly before roughly chopping them. The end result is a decadent and comforting dish with a perfect balance of savoury and spicy flavours. If you want to add your own twist, try using spinach instead of kale or substituting the spicy sausage for a mild version if you prefer a milder taste.

Variations

Variation 1: Chicken and Kale Sausage Pasta For a healthier take on traditional sausage and kale pasta, try using chicken sausage instead of pork. Cook the chicken sausage in a separate pan and then add it to the same pot with the kale to mix flavours. As for the pasta, use whole wheat fusilli to make the dish heartier and healthier. To plate, add some freshly chopped parsley and cracked black pepper as a garnish, giving the dish an additional layer of earthy flavours.

Variation 2: Shrimp and Kale Pasta For something completely different, swap out the meat for seafood. Use shrimp instead of sausage for a lighter, more refreshing taste. Use bowtie pasta instead and toss it in some olive oil and freshly squeezed lemon juice along with the kale for brightness. When plating, sprinkle some chopped toasted pine nuts for a nutty and crunchy texture.

Pro Tip

When cooking pasta, be sure to salt the boiling water for added flavour. Reserve a cup of pasta water before draining in case you need to add some liquid to the sauce to create a smoother consistency. To make the dish look visually appealing, consider using a wide-rimmed bowl or a large platter to make the beautiful colours of the dish stand out. Finally, sprinkle some fresh herbs or toasted nuts on top for texture and additional colour.

Leftovers

I love leftovers for days when you don’t want to cook. To store leftover sausage and kale pasta, first, make sure it has cooled down to room temperature so you don’t create condensation inside the container. Then, store it in an airtight container or a resealable plastic bag in the fridge for up to 3-4 days.

Before reheating, add a splash of chicken stock or water to the pasta, and heat it in the microwave, stirring occasionally. If the pasta seems too dry when reheating, add a bit more chicken stock or water to create a smoother, saucier consistency. It’s always best to reheat pasta in a covered bowl to ensure that the steam is captured, keeping it moist and preventing it from drying out. Enjoy!
