2 Finely Chopped Shallots
300ml Chicken Stock
Juice of 2 oranges
Zest of 1 orange
Salt and Pepper
How to make an orange sauce for duck
Put the shallots, chicken stock and juice of oranges in a saucepan, and bring to a boil. Simmer until reduced by half, then season with salt and pepper. Push through a sieve, add the zest of orange and reheat gently. Serve hot.

30g Butter
1 tbsp Plain Flour
300ml Chicken Stock
75ml Dry White Wine
3 tbsp Clear Honey
1 tbsp White Wine Vinegar

How to make a honey sauce for duck
Cook the shallots in the butter until soft. Add the flour and stir for 1 minute. Blend in the stock and wine. Boil and stir until thick. Add the honey, vinegar and salt and pepper and cook for 1 minute. Push through a sieve and add the parsley.
Blackcurrant Sauce
Making your own blackcurrant sauce is much easier than you might think! This recipe is simple and only requires a few ingredients. The best part is that the sauce can be used on just about anything

You will need:
- 250g Blackcurrants
- 300ml Water
- 250g Caster Sugar
- 1 tbsp Port
How to make blackcurrant sauce for duck
Put the blackcurrants and water in a saucepan, and bring to the boil. Simmer for 10 minutes until tender. Add the sugar and port and cook gently until the sugar has dissolved. Serve hot or cold.
