Collagen Powder

I’ve incorporated collagen powder into this recipe not only for its impressive protein content – boasting a whopping 90g of protein per 100ml of water – but also for its potential benefits to skin, hair, and joint health, making this pudding a nutritional powerhouse.

Ingredients

  • 150 g Short Grain Rice (pudding rice)
  • 1800 ml Full-fat Milk
  • 3 tbsp Sugar
  • 1 tsp Grated or ground Nutmeg (optional)
  • 8 tbsp Collagen Powder (or high protein powder)

How to make protein rice pudding in the slow cooker

Grease the slow cooker with butter.

Add all the ingredients, stir and set the slow cooker to low. Cook for 4 hours, or until the rice in tender and creamy.

Don’t worry if it’s a little bit runny after the 4 hours it will thicken up as it cools.

Divide between dished and top with jam.

Customise Your Rice Pudding

Another fantastic aspect of this recipe is its versatility. While the base recipe is delightful on its own, you can easily customise it to suit your taste preferences or nutritional needs.

For instance, you might add a scoop unsweetened cocoa powder for a chocolatey taste, or throw in some fresh berries for added vitamins and antioxidants.

You could even experiment with different types of milk, such as almond or coconut milk, to create varied flavour profiles or cater to dietary restrictions. The possibilities are endless, making this protein rice pudding a recipe you’ll want to come back to time and time again.
