For about 6 servings, you will need the following ingredients:

  • 4 Chicken Breasts
  • Virgin Olive Oil
  • Salt and Pepper
  • 1 Onion (Finely chopped)
  • 3 Garlic (Crushed)
  • 2 Carrots (Finely chopped)
  • 1 Red Bell Pepper (Chopped)
  • 1 Courgette (Chopped)
  • 1 tsp Coriander
  • 1 tsp Paprika
  • 1 tsp Oregano
  • 2 Sprigs Thyme (or 1 tsp dried Thyme)
  • 400 g Tinned Tomatoes
  • 1 tsp Parsley
  • 1 tbsp White Wine Vinegar
  • 450 ml Chicken Stock

How To Make Homemade Chicken Stew

STEP 1: Pat dry the chicken breasts and season with plenty of salt and pepper.

STEP 2: Add 2 tbsps of Olive oil to a deep-sided frying pan and set on medium to high heat. Wait until it shimmers, then add the chicken breasts. Brown on both sides, then transfer to a plate.

STEP 3: In the same pan, add the onions, garlic, carrots, peppers and courgettes with the spices. Season with salt and pepper and fry on medium to high heat for about 7 -8 minutes until softened.

STEP 5: Turn off the heat. Remove the thyme sprigs if using, and add the white wine vinegar. Break up the chicken breasts if you want to, stir through and serve.
