When I make mac and cheese, the best part is getting that gooey sauce on top. Sometimes it can be tricky to get everything just right – not too thick or thin, so you don’t end up with an overcooked dish but keep it undercooked enough to ensure your guests are happy! So when boiling your macaroni, boil it until it’s just tender.
Ingredients
- 375 g Macaroni
- 45 g Butter
- 45 g Plain Flour
- 900 ml Milk
- 2 tsp Dijon Mustard
- 325 g Mature Cheddar Cheese (grated)
- 60 g Breadcrumbs (Fresh white)
- Salt and Pepper
How to make baked Macaroni Cheese
You could serve this mac and cheese straight from your saucepan (just make sure you’ve fully cooked your macaroni), but transferring it to your oven-proof dish and baking it adds a lovely cheesy chewy, crispy topping which I love.
Cook the macaroni in salted water for 10 minutes until just tender. Drain and set aside.
Melt the butter in a pan. Add the flour and cook, stirring for 1 minute. Remove from heat and gradually blend in the milk. Bring to a boil until it begins to thicken. Simmer for 5 minutes, stirring.
Add the mustard, macaroni and ¾ of the cheese to the sauce and season with salt and pepper.
Lightly grease your ovenproof dish and spoon in the macaroni mixture. Sprinkle with breadcrumbs and the remaining cheese and bake in a preheated oven at 180°c Fan / Gas 6 for about 20 minutes until golden brown.

Nice but very wet! And I didn’t use the full 900ml of milk. It’d have been swimming in the runny sauce if I did.
Thank you for your feedback and glad you liked it apart from it being too runny. Maybe the macaroni was cooked to much before hand as usually the pasta will soak up the excess moisture.
Definitely super easy and delicious
