  • Preheat the oven at 160°fan/180°c/350°f/gas 4. Line 2 large baking trays with baking paper.
  • Mix all the ingredients together until it forms a dough. If dry, add a bit of water or almond milk.
  • Using a cookie scoop, scoop out some dough and push it into the scoop. Release onto the baking tray and repeat. Push down each cookie with your hand and imprint it with a fork. Bake for 10-12 minutes and leave to cool on the tray, then transfer on a wire rack to cool completely.
