How to roll out keto vegan cookies
You will know keto ingredients for cookies don’t combine that well, and rolling cookies with a rolling pin is a no-go because it just crumbles and can be quite frustrating.
One solution is to make sure that the texture is moist, so you may need to add a little water or some almond milk to the dough. Next, use a cookie scoop as in the photo below and press the mixture into the scoop. That way, when you release, it will stay together.

You will need:
- 125 g Peanut Butter with no added sugar
- 1 tbsp Coconut oil melted
- 6 tbsp Granulated Stevia
- 120 g Coconut Flour
- ยพ tsp Bicarbonate of Soda
- 2 tsp Vanilla Extract
How to make low-carb keto peanut butter biscuits
- Preheat the oven at 160ยฐfan/180ยฐc/350ยฐf/gas 4. Line 2 large baking trays with baking paper.
- Mix all the ingredients together until it forms a dough. If dry, add a bit of water or almond milk.
- Using a cookie scoop, scoop out some dough and push it into the scoop. Release onto the baking tray and repeat. Push down each cookie with your hand and imprint it with a fork. Bake for 10-12 minutes and leave to cool on the tray, then transfer on a wire rack to cool completely.
How to store peanut butter cookies
To store your keto peanut butter cookies, simply place them in an airtight container and store them at room temperature for up to 2 weeks. If you live in a warm climate, you may want to store them in the fridge to prevent them from getting too soft.
