What is bread and butter pudding?

Bread and butter pudding is a traditional British dessert that is made with bread, butter, and milk. It is typically served with a sweet sauce or custard. It’s a great way to use leftover white bread.

Plan Ahead

The sandwiches can be lined up in the dish, then covered in clingfilm and kept in the fridge the day before use. The sauce can also be made a day ahead and poured over the sandwiches an hour before cooking.

Ingredients

  • 100 g Sultanas
  • 2 tbsp Brandy
  • 50 g Butter
  • 8 Slices of White Bread
  • 3 Eggs
  • 300 ml Milk
  • 150 ml Double Cream
  • ½ tsp Vanilla Extract
  • 75 g Caster Sugar
  • 25 g Dark Brown Sugar
  • Icing Sugar for dusting

How to make bread and butter pudding

  • Grease a 1.8-litre shallow oven proof dish.
  • Put the sultanas in a bowl and pour over the brandy. Leave to soak for an hour.
  • Spread the butter over each slice of bread and sandwich them together. Trim off the crusts, (if you want to) then cut each sandwich into four triangles, depending on the size of the bread. I used a small white loaf so I didn’t need to cut them.
  • Arrange the sandwiches in the buttered dish. Scatter the soaked sultanas over the top along with any brandy left in the bowl.
  • Place the eggs in a jug with the milk, cream, vanilla and caster sugar and whisk together. Pour the mixture over the bread and sprinkle with the dark brown sugar. Let the bread absorb the liquid for about 30 minutes.
  • Bake in a pre-heated oven 180°c fan/200°c/gas 6 for 30 minutes until golden brown.
  • Dust with icing sugar (optional) and serve with cream.
