Simple Triple Chocolate Biscoff Rocky Roads

These Biscoff rocky roads are made with milk, dark and white chocolate for a triple chocolate experience. It’s a quick treat to make and no baking involved. Melt the butter, chocolate and Biscoff spread. Mix in the Biscoff biscuits, and marshmallows and transfer to a baking tin. Job done!

Ingredients

  • 250 g Biscoff Biscuits
  • 150 g Biscoff Spread
  • 200 g Milk Chocolate
  • 100 g Dark Chocolate
  • 100 g White Chocolate
  • 150 g Mini Marshmallows
  • 50 g Unsalted Butter

How to make triple chocolate Biscoff Rocky Roads

Line a baking tray or brownie tin with baking paper. Melt the butter, Biscoff spread, dark and milk chocolate in a pan or microwave. Leave to cool.

Melt the white chocolate in the microwave (20 second intervals).

Break up the biscuits into small pieces. Add the biscuits and marshmallows to the biscoff mixture. Mix until everything is thoroughly coated. Transfer to the tin and spread out evenly.

Top with the melted white chocolate and leave to set for 2 hours then cut into pieces before serving.

Storage

The best way to store Biscoff rocky roads is:

  • Once made, allow the rocky road to fully set in the refrigerator for at least 2 hours or overnight. This ensures the Biscoff spread binding agent hardens and holds the clusters together firmly.
  • For short term storage of up to 1 week, keep the rocky road in an airtight container in the fridge. The cold temperature will help prevent the chocolate from melting.
  • For longer term storage of up to 1 month, place the rocky road in an airtight container and store in the freezer. This prevents any melting or softening over time.
