In this recipe, I fry the bacon until it’s fully cooked plus, if you are using normal back bacon with the fat, it’s best to fry and crisp up before adding to your sauce otherwise, you’ll have rubbery fat in your pasta bake.

- 500 g Pasta Spirals
- 1 Onion Chopped in a food processor
- 4 Cloves of Garlic Chopped in a food processor
- 2 Red Peppers Chopped in a food processor
- 5 Sundried Tomato Chopped in a food processor
- 400 g Tinned tomatoes
- 2 tbsp Tomato Puree
- 2 tbsp Worcestershire Sauce
- 5 Bacon Medallions Chopped into small pieces
- 1 tsp Stock Powder
- ½ tsp Cayenne Pepper
- ½ tsp Smoked Paprika
- ½ tsp Mixed Herbs
- ¼ tsp Ground Black Pepper
- 400 g Cheddar Cheese Grated
How to make garlic and bacon pasta bake
- Cook the pasta per packet instructions and leave some liquid aside to add to the sauce later. Preheat oven at 200°c fan/210°c/Gas 7
- On medium to high heat, fry the onions in a little vegetable oil until softened, then add the chopped bacon. Cook until bacon is well cooked. Add the garlic and mix through for 1 minute.
- Add the tomato puree, mix through (you may want to add a little water at this point), and then add the tinned tomatoes.
- Add the peppers and tomato puree and mix through. Finally, add the Cayenne Pepper, Paprika, Herbs, black pepper, stock powder and Worcestershire sauce. Mix thoroughly and simmer for 5 minutes. When it gets thicker, add the liquid from the pasta. It may look a bit runny, but the pasta will absorb it in the oven.
- Add the pasta to the oven-proof dish, spread out, then add the sauce on top and mix through. Finally, sprinkle grated cheese on top and place in the oven for 20 -25 minutes.
