What types of apples to use for a traybake?
Apple traybake is a simple and delicious dessert that is perfect for any occasion. The key to a successful apple traybake is to choose the right type of apple. I used cooking apples, and they worked just fine.
For a tart and juicy apple traybake, try using Granny Smith apples. For a sweet and caramelized apple traybake, Golden Delicious apples are the way to go. And for a lighter and brighter apple traybake, opt for Rome or Braeburn apples. Whatever type of apple you choose, be sure to slice them the same size so that they cook evenly in the oven. With these tips in mind, you’ll be able to create a delicious and impressive apple traybake that is sure to please everyone.

Ingredients
This apple traybake contains a list of easy-to-find baking ingredients. I chose to use plain greek yoghurt, and this keeps the sponge moist. You will find with a lot of traybakes that they can dry out easily but not with this recipe!
- 300 g Apples (Peeled, cored and chopped into small chunks)
For the sponge
- 400 g Unsalted Butter (softened)
- 500 g Caster Sugar
- 2 Lemon zest
- 6 lrg Eggs
- 520 g Plain Flour
- ยฝ tsp Salt
- 3 tsp Baking Powder
- 200 g Plain Greek Yoghurt
Icing
- 200 g Icing Sugar plus a little water to make a paste.
How to make easy apple traybake
This apple traybake recipe is the perfect way to use up fresh apples. The apple cake is moist and fluffy, with a hint of cinnamon flavour. The icing on top is optional, but it does give the cake a delicious sweetness.
STEP 1: Grease and line your baking tin/s with baking paper, leaving enough so that it overhangs the baking tray. Heat the oven at 160ยฐc fan/180c/350f/gas 4.
STEP 2: Make sure your apples are chopped into 5cm chunks. Set aside.
STEP 3: Cream the butter, sugar and lemon zest in with your electric mixer for 3 minutes, until pale and creamy. Add the eggs one at a time whilst mixing.
STEP 4: In a separate bowl, mix the flour, salt and baking powder. Pour half of this into your egg mixture and mix until combined. Pour in the greek yoghurt, mix again, and then add the remaining flour.
STEP5: Spoon the batter into your tins and smooth it out evenly. Top with the apples. No need to push in!
STEP 6: Bake for 40 minutes or until the sponge is cooked. Leave to cook completely.
STEP 7: For the icing, mix the icing sugar with enough water to make a thick glaze. Using a teaspoon, drizzle over the cooled cake, then slice and serve.
How to store a traybake
If you have any leftovers store them in an airtight container. These will keep for up to 5 days and will not dry out! You can also freeze these apple traybakes; just make sure they are well wrapped.
