Easy No-Bake Rocky Road Recipe Without Nuts

Rocky roads are definitely a kid’s favourite and adults alike!. This recipe is made with dark chocolate, mini marshmallows, biscuits and currants for an all-around delicious treat.

Rocky roads are ideal for lunchboxes or if you want a quick snack to give you an energy boost. Ok, these aren’t healthy, but a little of what you love doesn’t do you any harm.

What’s inside A Rocky road

Here are the rocky road recipe ingredients for your shopping list:

  • Dark Chocolate
  • Mini Marshmallows
  • Digestive Biscuits
  • Butter
  • Currants
  • Golden Syrup
  • Icing Sugar (to dust)

Optional Additions

You could even add glace cherries for extra sweetness and colour!

Change the biscuits to a different variety like bourbons or biscoffs

Change the dark chocolate to milk if dark chocolate is not to your liking.

Maltesers Rocky Road Recipe

You could also add Maltesers! Just half the quantity of digestive biscuits and add the same amount of Maltesers.

MEASURING STICKY STUFF TIP:

When measuring your golden syrup, rub the tablespoon with some oil. It just drops right off!

Ingredients

  • 200 g Digestive Biscuits
  • 135 g Butter
  • 200 g Dark Chocolate or Milk
  • 3 tbsp Golden Syrup
  • 100 g Mini Marshmallows
  • 100 g Currants
  • Icing Sugar to dust

How to make Rocky Roads

  • Grease and fully line your baking tins with baking paper. This will make it easier for you to pull out of the tin.
  • Bash the biscuits in a bag, so there are lots of little chunks of biscuits.
  • Melt the butter, chocolate and syrup in a saucepan over gentle heat. Leave to cool.
  • Add the rest of the ingredients to the saucepan and stir until everything is covered.
  • Tip into the tins and spread out into the corners. If you want a thicker rocky road, just use one tin. Chill for at least 2 hours, dust with icing sugar, and cut into squares.

Storage for your treats

Keep your rocky roads in a cool place and store them in an air-tight container. If it’s summertime, they will be best stored in the fridge and can last up to 2 weeks, if not longer! When placing them in your container add baking paper in between the layers to prevent them from sticking together.
