- 2 Red Onions (Finely chopped)
- 500 g Mixed Colour Tomatoes (Roughly Chopped)
- 1 Red Chilli (Seeded and finely chopped)
- 75 ml Red Wine Vinegar
- 140 g Brown Sugar
- Salt and Pepper (to season)
Instructions
- Finely slice the onions and chilli and roughly chop the tomatoes.
- Add everything to the pot and season with salt and pepper.
- Bring to the boil and then simmer for 30 to 40 minutes until thick and jammy-like and transfer to hot sterilised jars. Leave to cool.
