- 250 g Green Beans (Fresh or frozen)
- 6 Salad Onions (or 1 red onion finely chopped)
- 200 ml Crรจme Fraiche
- 2 tsp Mint leaves (Finely chopped)
- 2 tsp Parsley (Fresh or dried)
- 1 tsp Basil (or lemon thyme)
- 1 tbsp Rapeseed Oil (or olive oil)
- ยฝ Lemon (Juiced)
- Salt and Pepper
How To Make Easy Potato Salad With Green Beans
STEP 1: Put the potatoes in a pan of salted water and bring to the boil. Cook for 10 minutes until the potatoes are tender but not falling apart. The last 3 – 4 minutes of cooking add the green beans.
STEP 2: Drain and cool under cold water and set aside.
STEP 3: Mix the crรจme fraiche, chopped mint leaves, lemon juice, parsley, onions, salt and pepper in a bowl.
Finally : Add the creamy mixture to the potatoes and green beans. Transfer to a serving dish and drizzle with the oil and scatter some basil or lemon thyme over the mixture.
