You can make the best fried rice at home without having to leave your house! It’s so easy and yummy. King prawn fried rice is a popular Chinese takeaway dish and one of my favourites. This homemade recipe tastes just as good, if not better than the takeaway!

What type of rice to use for Chinese fried rice

Traditionally, Chinese fried rice is made with long-grain rice. This type of rice has a light and fluffy texture, which makes it perfect for absorbing all the flavours of the dish. You can also use short-grain rice or basmati rice.

How to prepare your rice for frying

The key to making perfect fried rice is to use cold, cooked rice. This means that the grains are less likely to stick together and will remain nice and fluffy. If you don’t have any leftover rice, you can cook your rice ahead of time and then let it cool completely before using it in the recipe.

To cook the rice, rinse it several times in cold water until the water runs clear. This will help to get rid of any excess starch. Then, add the rice to a saucepan with 1 cup of water for every 1 cup of rice. Bring the water to a boil, reduce the heat to low and simmer for 10-12 minutes until the rice is tender and cooked through. Once cooked, remove the rice from the heat and let it cool completely.

Store cooked rice in the fridge

When you have cooked your rice and is completely cool, store it in the fridge to keep fresh. Cooked rice can be stored in the fridge for up to four days, although best eaten within 2 days.

This is what you will need, plus optional extras:

  • 1ย tbspย Vegetable Oil
  • 250ย gย Cooked Riceย (Jasmine or Basmati) – Wash before cooking and store in the fridge over-night
  • 12ย King Prawns or as many as you like
  • 2ย Cloves of Garlic
  • 2ย Spring Onions
  • 1ย tbspย Chinese cooking wineย (Shaoxing Wine)
  • 1ย Egg
  • ยฝย tspย White Pepper
  • 1 red onion (optional)
  • 1ย Roasted Red Pepperย (optional)
  • 50ย gย Peasย (optional)
  • 1ย Carrotย (cut into small cubes (optional))

Stir Fry Sauce For Fried Rice

  • 1ย tbspย Sesame Oil
  • 2ย tbspย Dark Soy Sauceย (or Tamari sauce)
  • 2ย tbspย Oyster Sauce

How to make king prawn fried rice like the Chinese

  • STEP 1: In a wok or deep frying pan, add the oil, onions and garlic. Fry on medium to high heat for a minute.
  • STEP 2: Add the prawns and continue to cook for about 2 minutes. Add the peas, salt, pepper and Chinese wine and stir through.
  • STEP 3: Add the egg and leave to cook before scrambling. Add the sesame oil, rice, soy sauce and oyster sauce. Stir through until hot and serve with chopped spring onion.

Chinese spicy prawn fried rice
