Ingredients

For 6 servings you will need:
250 g Dark Chocolate (at least 70% cocoa solids)
3 tbsp Cold Water
15 g Powdered Gelatine
4 Eggs
2 Egg Yolks
90 g Caster sugar
150 ml Whipping Cream (or double cream whipped until stiff)

Decoration

Grated chocolate
150 ml Whipping cream (whipped until stiff)

How To Make A Set Chocolate Mousse With Dark Chocolate

STEP 1: Break up the chocolate into a heatproof bowl and melt in the microwave in 30 second intervals. Leave to cool.

STEP 2: In a separate bowl add the cold water and sprinkle the gelatine on top. Leave for 10 minutes then place in the microwave for about 10 seconds until dissolved.

STEP 3: Combine the eggs, egg yolks, and sugar in a large heatproof bowl and put over a saucepan of simmering water. Whisk with a hand held mixer until the egg mixture is very thick and mousse like. Whisk in the gelatine.

STEP 4: Fold the whipped cream in the cooled chocolate, the n fold in the egg mixture. Pour into glass containers, cover and leave in the refrigerator until set.

STEP 5: Decorate with a piped rosette of cream and sprinkles of grated chocolate.
