Ingredients
You will need:
- 4 120g Chicken Breasts – Free-range if possible
- 200 g Pesto – Choose any pesto you like, I used my homemade Rocket Pesto
- 2 lrg Pieces of dried bread or Pitta – Grated into breadcrumbs
- 1 lrg Egg
CHICKEN GOUJONS TOP TIPS
The pesto has all the flavouring, so there is no need to add additional seasoning, but you can if you want to.
No need to have a separate bowl for the egg as it will be all mixed in together with the chicken and pesto.
If you’ve no breadcrumbs available, place a few pieces of sliced bread or pitta bread in the oven for 5 minutes until it’s dried out. Leave to cool and process into breadcrumbs by using a food processor or a grater.
Cut the chicken breasts lengthways and into strips of 1cm.
Chicken goujons don’t take look to cook. They take about 22 minutes but make sure you turn them halfway through baking.
Homemade recipe for chicken goujons
- Preheat the oven to 180°c fan/200°c/400°f/gas 6
- Slice the chicken breasts lengths ways into 1cm strips. Place them in a bowl with the pesto and mix thoroughly. Add the beaten egg and mix. Keep to one side.
- Process the bread in a food processor or grater to resemble breadcrumbs. If you’ve no dried bread, place it in the oven to crisp up and leave to cool, then process into breadcrumbs.
- Scatter the breadcrumbs on a plate or tray and fully coat the chicken strips one at a time and place them on a baking tray.
- Bake in the oven for about 22 minutes, turning halfway until golden brown and cooked through.
