Equipment

Ingredients
  

  • 4 120g Chicken Breasts (Free-range if possible)
  • 200 g Pesto (Basil or Rocket)
  • 2 lrg Pieces of dried bread (Grated into breadcrumbs)
  • 1 lrg Eggs

Instructions
 

  • Preheat the oven to 180°c fan/200°c/400°f/gas 6
  • Slice the chicken breasts lengths ways into 1cm strips. Place them in a bowl with the pesto and mix thoroughly. Add the beaten egg and mix. Keep to one side.
  • Process the bread in a food processor or grater to resemble breadcrumbs. If you've no dried bread, place it in the oven to crisp up and leave to cool, then process into breadcrumbs.
  • Scatter the breadcrumbs on a plate or tray and fully coat the chicken strips one at a time and place them on a baking tray.
  • Bake in the oven for about 22 minutes, turning halfway until golden brown and cooked through.
