Instructions
Preheat the oven to 180°c fan/200°c/400°f/gas 6
Slice the chicken breasts lengths ways into 1cm strips. Place them in a bowl with the pesto and mix thoroughly. Add the beaten egg and mix. Keep to one side.
Process the bread in a food processor or grater to resemble breadcrumbs. If you've no dried bread, place it in the oven to crisp up and leave to cool, then process into breadcrumbs.
Scatter the breadcrumbs on a plate or tray and fully coat the chicken strips one at a time and place them on a baking tray.
Bake in the oven for about 22 minutes, turning halfway until golden brown and cooked through.
