Why is it called Madeira cake?

Madeira cakes are named after the Portuguese wine Madeira. These types of cake have other names in different countries, such as pound cake in America or quatre-quarts in France, for example, where it’s called four quarters because there are typically four ingredients: flour, sugar, butter/margarine mixed with eggs. The name “Madeira Cake” came to be adopted by the UK during the early 1800’s – it was fashionable amongst upper classes who liked serving this slice with a glass of Madeira wine each time they had a drink together.

I didn’t want just a plain chocolate cake, so I jazzed it up a little and added some lovely white chocolate buttercream topped with sprinkles. Kids love a bit of buttercream in their cakes, I know I did when I was little, mmm!!

Ingredients

Chocolate Madeira cake is a denser, more chocolatey version of the classic Madeira cake. It’s perfect for chocolate lovers who want a richer dessert option. The cake is made with chocolate, butter, sugar, eggs, and flour. For the chocolate flavour, you can use either cocoa powder or melted chocolate. The cake is usually served with a chocolate ganache or frosting, but it can also be dusted with powdered sugar. Whether you’re serving it for afternoon tea or a special occasion, Chocolate Madeira cake is sure to please.

This is quite a large cake so if you want a small one please half the ingredients.

You will need:

  • 330 g Self-Raising Flour
  • 220 g Caster Sugar
  • 220 g Soft Margarine
  • 4 Eggs
  • 2 tbsp Cocoa Powder
  • 200 g Dark Chocolate (melted)
  • 6 tbsp Milk
  • White Chocolate Buttercream – optional

How to make chocolate Madeira cake

  • STEP 1: Heat the oven to 150°c/Gas 2. Grease and baseline a deep loose-based tin with baking paper.
  • STEP 2: Put all the ingredients in a food mixer fitted with the paddle attachment and mix on low speed to combine the ingredients, then increase the speed for 1 minute until nice and smooth. If it feels too thick, add some more milk to loosen it.
  • STEP 3: Pour into the tin and smooth the top to level. Bake in the oven for about 55 minutes to 1 hour. Remove from the oven and leave to cool in the tin for 5 minutes, then turn out on a wire rack. Leave to cool completely.
  • STEP 4: If adding buttercream, gently slice the cake into two halves and evenly spread the buttercream on one half. Add the rest to the top of the cake and finish off with a few sprinkles.
