A chocolate brandy cake is a classic dessert that is sure to please any crowd.
No brandy?
Chocolate brandy cake isn’t the same without the brandy, right? But what if you don’t have any brandy on hand? Luckily, sherry makes a great substitute. Sherry is a type of fortified wine that has a similar flavour profile to brandy. It is often used in cooking as an ingredient in sauces and marinades. When substituting sherry for brandy in a recipe, use an equal amount of sherry.

- 100 g Butter
- 100 g Chocolate (dark or good quality chocolate)
- 1 Egg
- 40 g Caster Sugar
- 100 g Digestive Biscuits (Coarsely crushed)
- 25 g Walnuts (plus extra to decorate)- Almonds are a good substitute
- 25 g Glace Cherries (chopped, plus extra to decorate)
- 1 tbsp Brandy (or sherry)

Chocolate brandy cake is the perfect treat to have around Christmas time or for special occasions and is quick and easy to prepare.

Ingredients
- 100 g Butter
- 100 g Chocolate (dark or good quality)
- 1 Egg
- 40 g Caster Sugar
- 100 g Digestive Biscuits (Coarsely crushed)
- 25 g Walnuts (plus extra to decorate)
- 25 g Glace Cherries (chopped, plus extra to decorate)
- 1 tbsp Brandy (or sherry)
Instructions
- Put the butter and chocolate in a bowl and heat for a few seconds in the microwave until melted. Set aside.
- Beat the egg and sugar together until light and fluffy, then stir in the melted chocolate and butter mix.
- Fold in the biscuits, nuts and cherries and finally, the brandy.
- Spread the mixture in a square tin fully lined with baking paper. Put it in the refrigerator to set, then cut into small slices when ready.
