Apples and blackcurrants are plentiful in Autumn, so I like to make the most of them and bake lots of different things. Apple and blackcurrant crumble with oats is a delicious and nutritious breakfast option. Yes, you can have this for breakfast and not just dessert!

The apple and blackcurrant provide a lovely sweetness, while the oats add a hearty, wholegrain goodness. You can also use blackberries as an alternative.

Frozen blackcurrants

I pick my own blackcurrants from our local fruit farm around July and August. I bring them back home, take the stalks off and give them a good wash, then put them in the freezer until when I need them. My favourite blackcurrant recipe is blackcurrant jam, as I love jam on toast for breakfast plus, having blackcurrant jam handy, you can add it to your cakes!

If you’ve no fresh or frozen blackcurrants, you can add a few dollops of blackcurrant jam instead! Just warm up the jam in the microwave to loosen the texture and apply it to the mixture as it says in the recipe.

Types of apples for crumble

I use eating apples, 2 Granny Smiths and 2 Braeburn apples in this recipe. You can use any type of apple you like including baking apples, for a lovely sharp taste.

Ingredients

For 4 – 6 servings, you will need the following:

Blackcurrant Compote

  • 150 g Blackcurrants (Fresh or frozen)
  • 75 g Caster Sugar

Apple Mixture

  • 4 Apples (Peeled, cored and chopped)
  • 15 g Butter
  • 15 g Caster Sugar

Oat Crumble Topping

  • 160 g Plain Flour (I used Wholemeal)
  • 100 g Butter
  • 30 g Oats
  • 3 tbsp Granulated Sugar
  • Pinch of Salt

How to make blackcurrant and apple oat crumble

  • Add the blackcurrants and sugar to the pan on low heat until the sugar dissolves. Turn up to medium heat and cook for about 5 minutes until the blackcurrants go soft and the mixture is thick and saucy. Set aside.
  • In a separate pan, melt the butter and add the sugar. Add the chopped apples to the mix and cook for 5 minutes, then take off the heat and set aside.
  • Preheat the oven to 160ยฐcFAN/180ยฐC/350F/Gas 4
  • Mix the flour and granulated sugar in a bowl and rub the cubed butter into thick breadcrumbs. Mix in the oats, salt and brown sugar.
  • Add the apple mixture to the baking dish and spread it out. Top with the blackcurrant compote, and finally, add the final layer of the crumble mixture. Bake in the oven for 40 minutes until golden brown.

What to serve with blackcurrant crumble

While it is traditionally served with custard, there are many other delicious options that can be enjoyed with this dish. Try serving it with whipped cream, creme fraiche or ice cream for a lighter option. For a more indulgent treat, serve it with a rich chocolate sauce or caramel!

Leftover crumble

If you do have leftovers, cover them well and keep them in the fridge for up to 5 days. Crumble freezes well, and I usually double or triple the ingredients and batch-cook them in the foil trays with lids for another day.
