Ingredients

You will need:

  • 360 g Raw King Prawns (2 small bags)
  • 3 tbsps Vegetable Oil
  • 1 tsp Ground Black Pepper
  • 1 lrg Onion
  • 1 Courgette
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • 3 tbsp Tomato Puree
  • 1 tin Chopped Tomatoes
  • 1 tbsp Hot Chili Paste
  • 5 Cloves of Garlic
  • 3 tbsp Balsamic Vinegar
  • 2 tsp Bullion Stock Powder
  • 2 tbsp Pesto

Instructions

STEP 1: Heat the oil on a medium heat in a large frying pan and add the black pepper, 3 garlic cloves and onions. Fry the onions until soft.

STEP 2: Add the chopped courgettes, peppers, tomato puree, chili paste and balsamic vinegar. Stir for 1 minute.

STEP 3: Add the tin of tomatoes, stock powder and the rest of the garlic. Bring to the boil then add the prawns. Cook until pink then add the pesto. Stir though until hot.
