Easy Thai Pork Stir Fry

This homemade Thai pork stir-fry is so easy to make and is ready in under 30 minutes! A pork mince recipe using simple main ingredients of pork mince, onion, garlic, lemongrass or zest of lemon, and chilli flakes or fresh chilli. Add some green vegetables and you’ve got a really tasty dinner with a bit of a kick!

Ingredients

For 4 portions you will need:

2 tbsp Vegetable Oil
1 lrg Onion
1 Lemongrass Stalk (Finely sliced) or 1tsp lemon zest
3 Cloves of Garlic (Finely chopped)
2 tbsp Soy Sauce (or Tamari Sauce)
2 tbsp Oyster Sauce
½ tbsp Fish Sauce
½ tsp sugar
500 g Pork Mince
150 g Purple Sprouting (roughly chopped or broccoli)
1 Red Bell Pepper (Chopped)
1 tsp Chilli Flakes (or 2 fresh chillies)

Pork Thai Stir Fry

Chopped all the vegetables, onion and garlic and keep aside.

In a small bowl combine the soy sauce, fish sauce, oyster sauce and sugar and stir in 1 tbsp of water. Keep aside.

Add the vegetable oil to the frying pan over high heat. Add the onion, lemongrass, chillie and garlic. Cook for 5 minutes until softened.

Stir the pork in the pan then add the sauce mixture, purple sprouting and pepper. Cook for an addition 6 minutes until the pork is cooked. Serve immediately.

Steamed Jasmine Rice:
Serve the stir fry over fluffy jasmine rice to soak up the flavourful sauce.

Rice Noodles:
Toss the stir fry with cooked rice noodles for a pad Thai-inspired meal.

Spoon the pork stir fry into crisp lettuce leaves (like iceberg or romaine) for a fresh, light option.

With a Fried Egg:
Top each serving with a fried egg for extra richness and authentic Thai flair.

How to store Thai pork stir fry

To store leftover Thai pork stir fry safely and keep it tasting great, follow these tips:

1. Cool Quickly:
Let the stir fry cool to room temperature (but don’t leave it out for more than 2 hours).

2. Airtight Container:
Transfer the leftovers to an airtight container. This helps retain moisture and prevents odors from spreading in your fridge.

3. Refrigerate:
Store in the refrigerator for up to 3–4 days.

4. Freezing (Optional):
You can freeze Thai pork stir fry for up to 2 months. Place in a freezer-safe container or zip-top bag, removing as much air as possible. Note: Some vegetables may soften further after thawing.

5. Reheating:

Reheat in a pan or wok over medium heat until hot throughout, stirring occasionally.
You can also microwave it in a microwave-safe container, stirring halfway through.
If the stir fry looks a bit dry, add a splash of water or broth while reheating.

6. Serving:

Tip:
