Easy Easter Smartie Blondies

Ingredients for blondies
You will need:
- 225 g Unsalted Butter
- 100 g White Chocolate roughly chopped
- 250 g Light Muscovado Sugar
- 150 g Caster Sugar
- 3 large Eggs
- 1 tbsp Vanilla Essence
- 325 g Plain Flour
- 1 tsp Baking Powder
- 160 g Smarties or mini eggs crushed
How to make Easter blondies
- Heat the oven at 160ยฐc fan/180 c /gas 4. Grease and fully line with baking paper 2 brownie tins 20 x 20cm
- Melt the butter and white chocolate in the microwave for 20 seconds or until melted. Leave to cool for 5 minutes.
- Add the sugars and eggs to a large bowl and whisk for 2 minutes until thick and foamy. Add the white chocolate mixture into your mixture and the vanilla essence. Mix together slowly.
- Fold in the flour, baking powder and half of the smarties until fully combined.
- Evenly distribute the mixture to the two tins. Add the remainder of the Smarties on top and press down into the mixture. Bake in the oven for 26 minutes.
- Leave in the tins to cool. When cool, cut into squares.

How to store Blondies
Blondies are best stored in an airtight container at room temperature. If you need to store them for longer than a few days, they can be frozen. When freezing, make sure to wrap them tightly in plastic wrap or place them in a freezer bag. Thawed blondies will still taste delicious but maybe slightly drier than freshly baked ones.
