In this recipe, I decided to use amareno cherries rather than traditional Christmas cranberries as it gives it a lovely flavour and goes well with dark brown sugar.

- 150 ml Milk
- 450 g Dark Brown Sugar – This gives a richer flavour.
- 115 g Butter
- 100 g Amareno Sour Cherries (Quartered) – or use Cranberries.

How to make Christmas fudge
Fudge is a classic Christmas treat, and it’s easy to see why. This delicious confection is rich, creamy, and packed with flavour. And what’s more, it’s surprisingly simple to make at home. Just follow these simple steps, and you’ll be enjoying homemade fudge in no time.
- Line a 20cm square tin with baking paper.
- Place all the ingredients into a saucepan and mix until everything is melted over low heat.
- Bring to the boil and stir continuously for 10 – 15 minutes. Take off the heat and leave to cool for 5 minutes.
- Add the chopped cherries and beat the mixture until it loses its shine. This takes up to 10 minutes.
- Press into a prepared tin, and spread evenly with the back of a spoon. Quickly add your sprinkles and lightly press them into the mixture. Leave to set in the fridge for about 2 hours before cutting into squares.s
