Looking for traybake dinner recipes that make midweek cooking easier? Traybake dinners are one of my favourite ways to get a homemade meal on the table without lots of pans or complicated steps. Most of the work happens in the oven, so you’re free to get on with other things while dinner cooks.

I’ve gathered my favourite savoury traybake recipes in one place so you can find something for busy weeknights, family meals or relaxed weekend dinners. Every recipe has been tested in my own kitchen.

Tips for making savoury traybakes

  • Use a large enough tray. Overcrowding makes ingredients steam rather than roast, so spread everything out or use two trays.
  • Cut ingredients to suit their cooking time. Slower-cooking vegetables such as potatoes may need cutting smaller or a head start in the oven.
  • Add quick-cooking ingredients later. Delicate vegetables, fish or fresh herbs often work best added part-way through or at the end.
  • Check that meat is cooked through. Follow the guidance in each recipe and make sure meat and fish are thoroughly cooked before serving.
  • Line the tray if you want easier cleaning. Baking parchment or foil can save on scrubbing, though check the recipe if you want ingredients to crisp up.
