What is apple amber pudding?
Apple amber pudding is a delectable treat that often gets overlooked! Made by baking apple slices with butter, cinnamon and sugar until it forms a heavenly caramelized apple filling – apple amber pudding is an easy-to-make dessert. How is apple amber made?
Apple amber is made by cooking apples and reducing them, so they are soft and pulpy. If you have apple puree, you can use this instead to save some time, then add the other ingredients as normal. When the apple filling is made, you then make the meringue and place it on top of the apple puree and bake in the oven for 30 minutes.

Apple amber in the microwave
If you’re looking to save even more time while cooking apple amber, look no further than the microwave! While it may seem like a modern convenience is required for this old-fashioned treat, popping apple amber into the microwave is a quick and easy way to heat up apple slices with a gooey coating of cinnamon and sugar – all without ever having to preheat the oven. Not only does it make apple amber easier and quicker to prepare, but it also helps keep your kitchen cool in the summertime too. Who said convenience food can’t also be classic?
Microwave apple filling
Put the apples in a bowl with water and butter. Cover and cook for about 5 minutes until soft and pulpy. Beat until smooth. Add the sugar, cake crumbs, cinnamon and yolks. Mix well. Transfer to a microwave dish.
Cook uncovered, on medium setting, for about 5 minutes until the meringue is firm and set. Brown lightly under the grill. Allow to stand for 5 minutes before serving.

For 8 portions you will need the following ingredients:
Apple Filling
- 900 g Cooking Apples (Peeled, cored and sliced or use ready-made apple puree)
- 30 ml Water
- 50 g Butter
- 100g Caster Sugar
- 6 tbsp Stale cake crumbs (plain cake)
- 2 tsp Ground Cinnamon
- 4 Egg yolks
Meringue Topping
- 4 Egg Whites
- 150 g Caster Sugar
- 1 tbsp Granulated Sugar to sprinkle on top (optional)
How to make traditional apple amber
Apple Filling
- Put the apples in a saucepan with water and butter. Cook until soft and pulpy. Beat until smooth.
- Add the sugar, cake crumbs, cinnamon and egg yolks. Mix well. Transfer to an ovenproof dish.
- Preheat the oven to 150ยฐc/130ยฐc Fan/300ยฐF.
Meringue
- Put the egg whites into a clean bowl. Beat until stiff and peaky (when the bowl is turned upside down, the whites should stay where they are).
- Gently fold in the caster sugar with a large metal spoon.
Assemble
- Add the meringue on top of the apple filling. Sprinkle with granulated sugar if using.
- Bake in the oven for 30 minutes or until the meringue is light gold. Serve with fresh cream.
Some tips for making this recipe
- Puree apples when they are in season and freeze them until needed.
- If you don’t have any stale cake crumbs use digestive biscuits instead.
- Sprinkle granulated sugar on top of the meringue before popping it in the oven for an extra sweet crunch.
