Traditional Easy Welsh Cake Low Calorie Recipe

Ingredients
  

  • 225 g Self-Raising Flour
  • 100 g Unsalted Butter (chilled and cubed)
  • 75 g Caster Sugar (Plus extra for dusting)
  • 50 g Currants
  • 1 Egg
  • 2 tbsp Milk

Instructions
 

  • Put the flour and butter in a large mixing bowl and rub together until it resembles breadcrumbs.
  • Stir in the sugar, currants and a pinch of slat in to the mixture.
  • In a small bowl beat the egg and add the milk, then pour into the dry ingredients. Mix together to form a dough. Don't over mix or the cakes will become tough.
  • Heat your frying pan and set to a medium to low heat.
  • Roll out the dough to about 0.5cm think and use a 7cm round cutter and cut out your welsh cakes.
  • Place a few round onto the frying pan and cook on one side for 1-2 minutes until a nice golden colour. If it is too dark turn down the heat Repeat on the other side.
  • Repeat for the rest of the cakes then serve warm and dust with caster sugar.
